He was born in Houston, Mississippi where he was considered a five-star recruit and earned a full ride to the state college. He appeared in all 13 games as a college freshman. In his junior season, Jones recorded 44 tackles and 2.5 sacks before declaring for the NFL draft.
No. 95 of the Kansas City Chiefs was ranked the eighth-best defensive tackle in the draft and was selected 37th overall in the second round. Jones made his professional debut in a 33–27 victory over the San Diego Chargers. He completed his rookie year with 28 combined tackles, two sacks, and four pass deflections in 16 games and 11 starts.
Between Week 5 and Week 16 of the 2018 season, Jones recorded a sack in all games. He broke the NFL record for most sacks in most consecutive sacks and was also named in the second-team All-Pro that year.
